I guess this answers the questions... "where's the beef?"
Yes, and it was delicious after about 9 hours in the smoker, and a rest of about half an hour. Went beautifully with smashed-grilled beets, caprese salad, and home made chocolate ice cream and cake for dessert.
I'm impressed! Not only a photographer but a fine chef as well.
My friend Pete was the chef. I just enjoyed the results.
